Happy almost Mother’s Day to all the mamas out there! If you’re still pondering a menu to whip up for your mother on her day, think about adding a sweet finish to the meal with this ethereal lavender + vanilla bean whipped cream. Or, start her day off on a sweet note and dollop it over some fluffy buttermilk pancakes and fresh berries. No one deserves some special treatment more than a mother.
Our world would simply not go ’round without all of the blood, sweat, tears, prayers, dedication, time and energy that goes into everything you do for your children, even adult children.
When I think about my “mama” and all she has sacrificed to help shape me into the woman I am today, the abundance of gratitude I feel is nearly indescribable. There aren’t enough flowers, candles, homemade coupon books, breakfasts-in-bed or greeting cards in the world to even begin to express my sentiments towards her. To me, she is the walking image of a Proverbs 31 woman, a woman who embodies grace, joy, beauty, and the unconditional love of Jesus daily, then shines it out for the world to see.
Mama, you simply inspire me. I have no idea who I would be today without the unwavering love, encouragement and grace you have shown me since you gave me life 25 years ago. I love you forever! Happy Mother’s Day!

- 2 cups mixed, fresh berries
- 1 cup heavy whipping cream
- 1½ teaspoons dried lavender buds
- 1 teaspoon mexican vanilla extract
- ¼ cup raw sugar
- 1 vanilla bean, seeds scraped out
- In a medium saucepan, add cream, lavender buds, vanilla extract, and sugar. Split open a vanilla bean and scrape out the seeds into the cream. Bring to a simmer and stir. Remove from heat and let it steep about 10-15 minutes. Strain the mixture with a fine mesh strainer to remove the lavender. Refrigerate for at least 30 minutes (up to overnight).
- Beat the cream with a whisk (or in a mixer using whisk attachment...I recommend this way unless you want a serious arm workout!) until soft peaks form, about 4 minutes on medium-high speed. Be careful not to overbeat.
- Dollop over fresh berries and serve cold!
