Grilled Haloumi with Honey, Pomegranate + Pistachios

December 20, 2019Amanda Munden

Mid December stirs up a lot of emotion for me, does it you? The juxtaposition of joy for the advent season and time with those I loved here and the longing for those who have gone before me, or what lays ahead can feel weighty, as can the high energy of parties, preparation and entertaining….

Ohhhh, behold the G R A Z E  T A B L E! You guys loved the hell out of this, so I thought I would do a post for those of you asking so you have a guide whenever it’s YOUR turn to throw down one of these bad boys for a gathering. …

Mini Mincemeat + Apple Galettes

December 12, 2019Amanda Munden

Mincemeat. Americans bristle at the idea of something that is classified as a sweet but contains something savory like meat (or meat fat like suet, as most traditional mincemeats call for.) But let me tell you, it. is. delicious. Don’t knock it till you try it. …

Mini Mummy Pizza Bites

October 30, 2018Amanda Munden

Things sure are getting spoooooky around here.

And this mama is getting super excited for Townes’s first Halloween. She’s going to be so cute y’all. For all 3 minutes she’ll likely stay in her costume, ha!

I know she is way too young to appreciate an appetizer like this (or costumes or candy for that matter) but these Mini Mummy Pizza Bites are still so fun (and easy) to make! They’re sure to be a hit, whether you’re keeping it low key at home are partying it up.

Happy Halloween, everyone!

Chorizo, Green Pea + Ranch Sweet Potato Skins

February 3, 2018Amanda Munden

I would love to go on and on about football here. About how pumped I am for the Super Bowl tomorrow or feign claim to some tiny ounce of Nick Foles’ success with the Eagles because I was his cheerleader after all!! That’s obviously why he is where he is today. Yep, there’s my plug. Any Westlake graduate between 2000-2010 has one too, if only to puff up and remark “we went to the same high school” with our noses in the air like we somehow contributed to his herculean athleticism. …

Game Day Nachos

September 15, 2017Amanda Munden

Fall is (almost) officially here! If not evidenced by the cooler temperatures, at least by the abrupt interruption of original tv programming (modern day equivalent: Netflix shows on pause) by…football. You can just sense my enthusiasm, right? I mean, I wasn’t a high school cheerleader for nothing, but I have to say, and you probably already guessed it, I’m more in it for the tailgating snacks and socialization. (Especially these days. Can’t believe I’ll be 30 weeks pregnant today!)…

Okra, Corn + Peach Griddle Cakes

June 7, 2017Amanda Munden

Oh, sweet summertime is finally here! To usher in a new season of longer, more languid days with extra vacation and pool time sprinkled in, I dreamt up a dish inspired by some of my favorite summertime produce: okra, corn and peaches. …

Charcuterie and Cheese Board with Bacon Jam

December 16, 2016Amanda Munden

charcuterie and cheese

A well-crafted charcuterie and cheese board is a beautiful sight to behold. Thankfully, my husband and I share this deep-seated belief. I’m not sure we would be as happily married as we are without our common affinity for smoked meats and artisanal cheese. (Everyone has their vices, k?…)…

Shrimp Summer Rolls

shrimp summer rolls

Can you believe August is already here?! For me, cooking in late summer in Texas typically boils down to (pun intended) methods that utilize the least amount of heat possible….

Hola vecin@!

I’m Amanda.
I pioneered this culinary arts project back in the dark ages of food blogging (circa 2012) as a way to catalog creations for family, nurture my creativity and blow off steam while teaching dual language elementary in Title 1 public schools. When my students were in PE, I was standing on their desks by the only window in the classroom, vying for the best natural light to capture my “Sole Nicoise en Papillote” leftovers. While it’s a bit mind boggling/sometimes pretty cringe to dig into the archives here, I want to leave this blog up as a digital, energetic ode to my ever-evolving creative process. A thank offering to honor and love all versions of myself. These days, I still teach and write and cook but in a different configuration, another passionate culinary endeavor called Vecina. Check her out here! It was a pure delight to grow this labor of love for over a decade, to hone my voice and nurture myself. Thank you for bearing witness to my becoming.
