Feliz February, friends! With Valentine’s day right around the corner, I thought I would share a super simple dessert that is as healthy as it is nutritious (well, sans the ice cream..but really, who’s guna leave that out?). These dark chocolate balsamic roasted pears truly hit all corners of the palate. The rich, tangy dark chocolate balsamic vinegar* infuses the fruit with a sumptuous depth of flavor. When spooned over your favorite ice cream (I am a sucker for Lick’s Caramel Salt Lick flavor) and topped with salty pepitas, this dessert is some serious melt-in-your mouth perfection. You won’t even miss all the fat and calories. Enjoy!
*If you can’t find dark chocolate balsamic vinegar at a grocery store, try a specialty oil and vinegar shop or ordering it online. Here in Austin we have the wonderful Con’Olio Oils and Vinegars. 

- 4 ripe pears, such as Bartlett or Bosc, peeled and left whole (or sliced into wedges)
- 3 Tablespoons dark chocolate balsamic vinegar
- 1 teaspoon honey
- pepitas (salted green pumpkin seeds)
- favorite ice cream (caramel and/or homemade vanilla are amazing with this)
- Heat oven to 385 degrees F.
- Place pears on a large baking pan or casserole dish.. Drizzle generously with balsamic vinegar and a bit of honey.
- Bake at 385 for about 30 minutes until tender and juices are escaping the pears.
- Serve warm with ice cream and top with pepitas. Drizzle with any collected sauce. Enjoy!
