Red Velvet Crinkle Cookies

Ingredients
- 3 cups all purpose unbleached flour
- ⅓ cup unsweetened cocoa powder (such as Valrhona)
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1½ cups brown sugar
- 1½ sticks (3/4 cup) unsalted butter,
- 2 eggs, 2 egg yolks
- ½ cup buttermilk
- 1 teaspoon vanilla extract
- 1 ounce red food coloring
- 1 cup white or regular chocolate chips (optional)
- 1 cup powdered sugar
Method
- Add dry ingredients except for sugar (flour, cocoa powder, baking powder, salt) in a bowl and combine.
- In a mixing bowl beat together eggs, egg yolks, brown sugar and butter until well combined.
- In a smaller bowl, mix together buttermilk, red food coloring and vanilla extract. Add to the mixing bowl with eggs, sugar, and butter and combine.
- Slowly incorporate the dry ingredients to the wet ingredients, being careful not to overwork the batter. Fold in chocolate chips if using.
- Refrigerate the batter for 30 min- 1 hour. Meanwhile, preheat the oven to 350F and line a few cookie sheets with parchment paper. Once batter is somewhat firm, use an ice cream scoop to portion out cookies and roll the batter around in powdered sugar until completely covered. Place on cookie sheet about 2 inches apart. Let bake for 10-12 minutes.
