Summer is finally here y’all! And my body is slightly in shock by this because we returned from autumn in Argentina just a few days ago. (Our trip to Buenos Aires was absolutely divine. More on this later…thinking I will add a new “travel” section with mini city guides!)
But now, back in the Texas heat, my cooking is certainly taking a turn for the lighter and fresher with a heavy emphasis on simplicity. The relaxed pace of summer is always something I eagerly anticipate. Even though there’s still 24 hours in the day, the evening hours infused with lingering daylight provide ample time for languorous, low key meals. Less prepping, more time relaxing with the people you love. And this greek bowl is just the ticket for a healthy, delicious, very low prep (and inexpensive) meal for everyone to enjoy. - 2 zucchinis, thinly sliced
- 2 cups cherry tomatoes
- 1 jar grilled artichokes in oil (Trader Joes has great ones!)
- 1 Tablespoon olive oil
- 1 teaspoon sea salt
- ½ teaspoon pepper
- several cups of fresh greens (ie spinach)
- a handful of microgreens
- 6-8 dolmas (store-bought or homemade)
- 1 cup tabbouleh (store-bought or homemade)
- 1 cup hummus (store-bought or homemade)
- 1 cup feta cheese
- juice of a lemon
- Heat oven to 400 degrees F. On a large baking sheet, combine zucchini, cherry tomatoes and artichokes and drizzle with olive oil. Sprinkle with salt and pepper and roast for 15 minutes. Meanwhile, assemble the greek salad bowls by laying a base of greens, then add the dolmas, a dollop of tabbouleh, a dollop of hummus and some feta cheese. Add the roasted veggies, and top it all with a squeeze of lemon and some microgreens.
