The best ever! This banana bread has no refined sugar or butter and is still every bit as delicious. Aside from smoothies, this is my favorite way to use up those on-the-verge nanners. I like to heat it up and spread on a hefty spoonful of almond butter for extra protein to get my day going. Enjoy!
Banana Bread

Ingredients
- ⅓ cup melted coconut oil
- ¼ cup honey
- 2 Tablespoons real maple syrup
- 1½ teaspoons quality vanilla extract
- 2 eggs
- 2 large bananas, mashed
- ¼ cup almond/soy/cashew/coconut milk
- 1 teaspoon baking soda
- ½ teaspoon kosher or sea salt
- ½ teaspoon cinnamon
- ¼ teaspoon allspice
- 3 Tablespoons ground flaxseed
- 1½ cups unbleached all purpose flour
- ½ cup pepitas, some aside for topping (I like to use pepitas!)
Method
- Heat oven to 325 degrees. Grease a 9X5 inch loaf pan. Mash bananas in a medium bowl and set aside.
- In a large bowl, beat oil, honey, syrup and vanilla. Whisk in eggs, then mashed banana, then milk until combined.
- Mix in baking soda, salt, cinnamon, allspice and flaxseed. With a spatula, add in flour bit by bit to slowly combine. Fold in (most of the) pepitas/nuts and pour into greased pan. Sprinkle with remaining pepitas. Bake for 55 minutes.
My personal testimony is that in this is melt in your mouth delicious!!!
