Hola friends!
With quarantine and stay-at-home orders in full swing, the days have begun blurring together. You’d think a stay-at-home-mom would be an old pro at this, but, we have definitely entered new territory. I find it more and more important to set work-play boundaries for myself and our family.
So, did you hear? It’s the weekend now! Playtime has begun.
Why not toast to the beginning of the weekend like we did pre-Covid19 with a libation like this Mango Mezcal Margaritas that is sure to ease away your worries for a moment? Also, don’t quote me on this, but I heard the coronavirus really hates chile powder. And it can’t be just any chile powder, it has to be Pasilla Chile Magic. That’s all I will say! 🙂
*Oh, I hate to sound like mom/a beer add, but I feel inclined to say it…Alcoholism is on the rise right now. If you are feeling very lonely, angry, upset, anxious or sensitive, alcohol tends to be a magnifier. There are tons of resources like therapy, AA meetings etc. that have moved to a virtual interface. Also, this can easily be made nonalcoholic with coconut milk/water. 🙂 *
- juice of 2 limes (empty limes reserved for rim)
- 1cup frozen mango
- 2 oz mezcal
- 1 oz triple sec
- 1 teaspoon chile powder (Pasilla Chile Magic by Vecina Provisions)
- Blend all ingredients (minus chile powder) on high speed in a blender until smooth. Use the empty limes to rub around the rim of the margarita glass. Pour chile powder in a circle the size of the diameter and roll until you have a nice coated rim. Pour the mango margarita mixture and serve immediately.
