This cake. You have to know how much I really love you by giving you this cake. You see, it’s November, which is a B I G celebratory month over here. Townes will be T W O, Thanksgiving, our dating anniversary, our wedding anniversary and more. It was also our friend/neighbor’s birthday, so what better time to test out cake recipes?
Be informed: I made this start to finish WITH my toddler, which was incredibly fun but also please….just let me stir it now…the lumps!…no… you have already consumed the equivalent of a cup of sugar and what is this, death by chocolate? Also, sprinkles are just glitter in sheep’s clothing. Worse than play-dough. Because they crumble and smush into all. of. the. things. So consider this your official warning if you experience some stroke of lunacy like I do on the regular and want to bake an enormous chocolate sheet cake WITH sprinkles WITH a toddler. I had the realization this week that I am actually addicted to chaos. Speaking of…
I tend to enjoy more complex cooking projects; I like a good challenge, but this is not that (unless you’re doing it with a toddler.) I feel like I am constantly being encouraged to keep it simple. A Texas Sprinkle Chocolate Sheet Cake is a giant dose of nostalgia + simplicity for me.
My mom would make a version of this for our birthdays growing up. YES- Mom, this is your official shoutout…a recipe inspired by YOU! Can you believe? (We always joke because cooking has never really been her favorite past time, it was mostly business for her when we were young. But of course, she did it! I mean she had to, we would die…)
Also, my MIL makes a Coca-Cola Cake that tastes VERY similar to this, but obviously this doesn’t have the Coca-Cola. She made it for Townes’s birthday last year…yum. So, here is my version, simple and sweet.

This recipe is a sliver (ahem-a whole sheet pan) of heaven. It’s nostalgic to me, a Texan gal, and I want to ensure my daughter grows up with this cake, if it’s the last thing I do!
Ingredients
2 cups granulated sugar
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1 cup butter (2 sticks)
1 cup water
5 Tablespoons high quality cocoa powder
2 teaspoons cinnamon
1 /2 cup buttermilk (can always mix regular milk with some vinegar)
1 large eggs, lightly beaten
1 teaspoon vanilla extract
Instructions
Preheat oven to 350 degrees F. Use butter/ cooking spray to lightly grease a large, rimmed baking sheet or half sheet pan (makes a thicker cake). Set aside.
In a big bowl, whisk together sugar, flour, baking soda and salt.
In a medium saucepan, add the butter and water. Stir (or sift-if you’re weird about lumps) in the cocoa and cinnamon. Bring the mixture to a boil and pour over the dry ingredients, stirring until combined.
Add the buttermilk, eggs, vanilla and mix until completely combined.
Spread the batter evenly and bake for 20-25 minutes (keep an eye in case your oven in cooler/hotter…you want the middle to spring back to the touch.)
Easy chocolate frosting
Ingredients
1/2 cup butter (1 stick)
5 Tablespoons cocoa powder
1/3 cup milk
1/2 teaspoon vanilla extract
1 teaspoon cinnamon
big pinch of salt
3 cups powdered sugar
favorite sprinkles
Instructions
While the cake is baking, take out a medium saucepan (use the same one you used for cake prep!) and add butter, cocoa, milk, vanilla, cinnamon and salt. Heat, stirring constantly, until the mixture comes to a simmer. Remove from heat immediately for it separates. Whisk in the powdered sugar gradually until frosting is smooth. Keep it warm. Pour warm frosting over warm cake and spread evenly. Add sprinkles!
