Happy Cinco de Mayo dear amigos!
I hope you whoever is reading this is well in all senses. Please just know, you are not alone. Whatever you are going through is real and it is ok. It’s a challenging time for everyone, but I especially feel for those of you (myself included) who struggle with maintaining your mental health. My heart is with you.
Even as many restaurants are beginning to open their doors again, we will not be venturing out this cinco de mayo, as tempting as it sounds. We will enjoy taco Tuesday at home and top it off with my favorite pound cake ever, Mexified with cajeta! Who doesn’t love that? (My mother-in-law has been making this for years…sans cajeta.)

- 3 sticks of butter, room temperature
- 1 (8 oz) package of sour cream
- 3 cups of sugar
- 3 cups all purpose (unrefined) flour
- 6 eggs, room temperature
- 1 Tablespoon pure vanilla extract
- ½ teaspoon ground cinnamon
- Preheat oven to 325 F. Grease and flour a large bundt pan.
- Cream the butter, cream cheese and sugar together for about a minute on medium speed. Add in the vanilla. Beat in the eggs one at a time, alternating with ½ cup flour, beating well after each addition.
- Pour batter into bundt pan and bake 1- ½ hours. Serve warm with cajeta, whipped cream, ice cream, or as is!
- 2 quarts goat milk (canned or fresh)
- 2 cups sugar
- a 2 inch piece of true cinnamon
- ½ teaspoon baking soda dissolved in 1 Tablespoon water
- In a medium to large pot/ dutch oven/cazo, combine the milk, sugar and cinnamon and set over medium heat. Stir regularly until the milk comes to a simmer. All of the sugar should have dissolved by now. Remove the pot and stir in the dissolved baking soda. It should foam up. Return to heat.
- Adjust the heat to maintain the mixture at a brisk simmer. Cook, stirring every now and then, until the mixture is a golden. At this point, stir frequently for a few minutes as the mixture changes to a deeper caramel color and a thicker consistency.
- Strain if necessary. Store in a jar!
